Legumes

Legumes contain carbohydrates that are difficult to digest and can cause bloating. To avoid this, it is advisable to soak them overnight. Soaking causes some of the difficult-to-digest substances to dissolve in the water, which is why the soaking water should not be reused. This improves the digestibility of the pulses.

Pulses should be rinsed thoroughly before cooking. If the tap water is very hard, it is advisable to boil the water first and let it cool down or to use still water from a bottle. Soaking can also significantly reduce the cooking time. Legumes are also an excellent source of iron for vegetarians.
